Directions

Take a bowl, add Water, Salt, Paneer thick slices and brine for overnight.

Take Water in a bowl. Add Red Matta Rice and keep aside for 45 mins soaking.

In a heavy bottom vessel, add Water, soaked Red Matta Rice, Salt and bring to boil. Strain the Rice and keep aside.

In a heavy bottom vessel, add Water, Rajma and cook till soft. But not mashed. Drain and preserve the Water.

Take a bowl, add brined Paneer, Chipotle Tabasco, Chipotle Chilli Powder, Paprika Powder and Oregano. Mix well and keep aside for marination.

Heat Oil in a pan. Add sliced Onion, julienne Pepper and saute till Brown.

Add Salt, Pepper, Oregano, Paprika and sauté. Remove to a bowl and keep aside.

Heat Oil in a pan. Add chopped Onion, chopped Chilli and toss on a medium flame.

Add Salt, Pepper, roasted Cumin Powder, Turmeric, chopped Tomatoes and toss.

Add Chipotle Tabasco, boiled Red Rice and sauté.

Add chopped Coriander and sauté.

Remove to a bowl and keep aside.

In a blender, add half of the boiled Beans, Rajma Water and make a paste. Keep aside.

Heat Oil in a pan. Add minced Garlic, chopped Green Pepper, Jalapeño, Onion and sauté till Golden Brown.

Add chopped Tomatoes and sauté.

Add Paprika Powder, Cumin Powder, Chipotle Chilli Powder, Salt, Pepper and saute.

Add boiled Beans and blended Rajma and sauté. Continue to cook till Water is absorbed.

Add Chipotle Tabasco and cook till mixture begin to thicken.

Remove to a bowl and keep aside.

Heat Oil in a griddle pan and grill the marinated Paneer for 1 min on each side.

Remove to a baking tray and place in a oven for 6 mins at 180 degree C.

Remove to a plate and cut into strips.

Take a bowl, add Atta, Salt, Water and knead till the dough comes together.

Add Oil and continue knead till the dough is smooth.

Take a portion of the dough and flatten the dough.

Heat the pan and cook the wrap on both side.

In a bowl, add grated Cucumber, Salt and keep aside for 15 mins and squeeze out the water.

Take a blender, add Curd, Garlic and crush lightly.

Strain the Garlic juice to a mixing bowl. Add Curd, Salt, minced Mint, Parsley, squeezed Cucumber and whisk till smooth.
