Directions

Add Water, Lobia and soak overnight.

In a heavy bottom vessel, add Water, Salt, soaked Lobia and cook for 4 mins till lobia is soft.

In a heavy bottom vessel, add Water, Salt, Corn and bring to boil for 10mins.

Place the Corn in dry cutting board, cut off the kernel and discard the cob. Reserve the kernel in a bowl and keep aside.

In a mixing bowl, add boiled Corn, chopped Jalapeño, Coriander, Salt, Lemon Juice and toss well and keep aside.

In a mixing bowl, and place the deseed chopped Tomatoes and reserve the corn seeds.

In a blender, add reserved Tomato corn seeds and crush with short burst.

Strain the juice and add to the above mixing bowl. Add chopped Coriander, Jalapeño, minced Green Chilli, roasted Cumin Powder, Chipotle Tabasco, Salt and Pepper. Mix thoroughly and keep aside.

Heat Oil in a pan. Add sliced Onion, julienne Green Pepper, Zucchini till brown.

Add Salt, Pepper, Oregano, Paprika and saute for another minute. Keep aside for later use.

Heat Oil in a pan. Add minced Garlic, Onion and saute until golden brown.

Add chopped Tomatoes, Jalapeño, Paprika Powder, Cumin Powder, Oregano, Salt, chopped Coriander, Pepper and saute.

Add boiled Lobia and cook for a minute.

Add remaining Water and cook till Beans are partly mashed.

Remove to a bowl and keep aside.

In a mixing bowl, add Atta, Salt, Water, Curd and knead to form a dough.

Flatten the dough on a flat surface and add Oil and continue kneading to a smooth dough.

Take a portion of the dough on a rolling pan and make a round circle.

Heat a pan and cook the above Roti both the side. Keep aside.

Place the Roti in a flat surface.

Evenly spread the Lobia Refried Beans on the Roti.

Top with Sauteed Vegetables and Corn Salsa.

Add Arugula Lettuce on top.

Fold the Quesadilla into half.

In a sandwich griller and grill the Quesadilla till the grill marks appear.

Cut the Quesadilla into 4 pieces and serve with Spicy Tomato Salsa.
