Place the eggs in a pan with water and salt. Water should cover the eggs. Boil for 10 min. Refresh the eggs under cold water and immediately peel the shell. Cut each egg into two halves and set aside.

Peel and cut the onion roughly. Peel and chop the ginger. Place in a mixer jar along with garlic, black pepper, fennel seeds and coriander seeds. Add just enough water to make a fine paste. Set aside.

Heat oil in a pan. Add curry leaf and saute it for a few seconds. Add the masala paste along with salt and cook till the masala cooks through.

Add the boiled egg pieces into the pan. Keep the flame on low and slowly roast the eggs along with masala.

Turn over the eggs to make sure they are evenly roasted all over. The eggs are ready when the masala is dry and the eggs are brown and roasted. Sprinkle with black pepper powder and chopped coriander.
