Wash the potato and place in a pressure cooker along with water. Once cooked soft, remove and set aside. peel and place in a bowl. Mash completely with a fork. Chop the garlic and spring onion

In a saucepan, heat oil saute garlic till golden. Add the mashed potato and gradually add milk while mixing.

Half way through add the rest of the milk along with salt and black pepper and mix till the mashed potato is creamy. Do so on a low to medium flame.

Once done, mix in spring onion and check seasoning.

Garnish with a little more spring onion and serve warm or hot.
