In a bowl, add warm water, jaggery, and instant yeast set aside for 5-7 min, let it yeast bloom. Finely chop the garlic. combine the flour, salt, garlic, Italian seasoning and mix well.

Add the yeast water to the flour mixture and knead into a smooth dough. Knead at least for 10 min. Mix in the olive oil when 3/4th done and mix again add a little water if required. Do not over knead as this is 100% whole wheat and will turn hard or dense.

Form a ball, grease it with olive oil and keep it covered at a warm place for 11/2 - 2 hours. This will help the dough rise.

Once proofed, do not over knead, however, knock out the air from the dough and roll into a ball. Onto a clean surface, after greasing with a little oil, divide the dough into two equal halves. Roll into a ball, grease with oil and cover and leave again for 15min (2nd stage of proofing). Grease a baking tray with a little olive oil.

Take the dough on a dusted flour, lightly press into a round shape.

Brush the remaining olive oil sprinkle some italian seasoning.

Now fold the dough to give a half-moon shape and sprinkle some seasoning. Place the dough on a greased tray. Give width wide cuts to the dough with a knife. Do not cut it all the way through, but just a half.

Finally, bake the bread in a preheated oven at 180 degrees c for 10- 15 min. Once done, take out the bread from the oven and brush some more olive oil. (Brushing oil after baking is important as it will make the crust soft).
