Wash the raw mango, peel and cut into rough dices.

Heat oil in a pan, add whole red chilli and saute it till it gets crispy. Add fennel seeds, methi dana seeds & kalonji and saute for a few seconds.

Add turmeric powder and red chilli powder and saute it for a few seconds. Add a little water to avoid masalas from burning.

Now add raw mango and mix well with the spices.

Add a little water, black salt, and jaggery and cook on slow flame till the mango gets soft.

Once the mango gets soft, turn off the flame. Transfer to a clean bowl and use as required.
Here are some tips and tricks that will be of help when you implement your aam launji recipe:
1. Dice your mango into cubes of equal dimensions so that they soak in the flavours well. Make sure there are no traces of green mango skin on them. 2. Adjust your sweet levels when you sauté itself.
