Cut Bell Peppers into julienne.

Slice garlic.

In a pan, add Oil, Garlic, Bell Pepper and Thyme.

Cook in a slow flame till Peppers are softened and Garlic are caramelised. Keep it aside.

Blanch the Spinach.

Heat Oil in a pan and add Garlic.

Add Spinach and saute for 3-4 mins.

Toast on both sides and cut into triangles.

Soak Chickpeas for 8 hrs.

Boil it with salted water till soft.

In a blender, boiled Chickpeas, Cumin Powder, Garlic, Tahina, Oregano, Lemon Juice and Olive Oil.
