Tips to make good Tofu Bhurji:
Tofu bhurji is easy to make. Some tips on How to make Tofu Bhurji at home: • Prepare the dish on medium-low flame. High flame with burn the ingredients and the flavours of the spices will not come out properly. • Cut the onions, tomatoes and bell peppers in small pieces, to make an even dish and ensuring the scrambled look of the dish. • Sautee the onions, till they are just golden brown not completely brown. Completely brown onions become dry. Bit of moisture makes the dish soft. • Sautee the bell peppers on low heat to retain the flavour. • Cook tomatoes till they turn mushy and release their juices. • Add a bit of vegetable stock, if the dish becomes dry. • If chat masala is not available, you can use pav bhaji or any curry masala. • Add scrambled tofu and cook for few minutes on low flame, so that the tofu absorbs all the flavours and cooks well.
