Cut Broccoli into small florets. Blanch in salted Water and transfer to ice cold Water.

Peel and deseed Red Pumpkin, cut into small dices.

Roast Pumpkin in oven at 180 degree C for 10 minutes. Keep aside.

Ccashew Nut Mayonnaise- Soak the Cashew Nut in water for 1 hour and rinse. Blend with Garlic, Dijon Mustard, Salt, Lemon Juice and boiled Sweet Potato till smooth.

Poppy Seed dressing- Whisk Cashew Mustard, Yoghurt, Poppy Seed and season with Salt, Pepper & Lemon Juice. Keep the dressing aside in refrigerator.

Marinate Chicken Breast boneless with Salt, Pepper, Lemon Zest, Dijon Mustard, Thyme.

On a hot grill pan, cook marinated Chicken Breast. Cook in oven at 160 deg C for 6 minutes.
