For Cashew Mayo—soak the Cashew for 1 hour and rinse.

In a blender, add soaked Cashew, Dijon Mustard, Lemon Juice, Garlic, Salt, boiled Sweet Potato. Blitz to a smooth paste.

For the Dressing- Add cashew mayo, Salt, Pepper, Lemon Juice, Parsley in a blender.

Blitz well. Keep chilled for later use.

For Caramelised Nuts— Mix Honey and Walnuts and lay in a baking tray and bake at 120 degrees C for 15 mins.

Season Purple Cabbage, Carrot, Yellow Zucchini, Green Zucchini, Radish and soak it in Lemon Juice. Refrigerate for at least 45 mins.

Put shredded mix Lettuce on a serving bowl.
