Peel the mango and cut it into dices and peel the pomegranate and take out the seeds, keep it aside. Take a bowl, add chia seeds along with matcha powder, along with coconut milk and honey and mix well so that there are no lumps.

Cover the bowl and place in the fridge for 1 hour.

Once soaked, mix the pudding and transfer to a serving bowl. Layer it with diced mango, pomegranate seeds, chopped dates, nuts, and seeds, garnish it with a mint sprig.
