Soak Foxtail Millet in Water.

Boil it in a pan with Salt.

Cut the Sweet Potato into dices and place in cold water immediately.

Wash the Sweet Potato and allow it to dry.

In a mixing bowl add Sweet Potato, fresh Thyme, Salt, Pepper, Oil and mix it well.

Arrange the mix on a baking tray and bake at 160 degree C until golden brown.

Remove from the oven and allow to cool.

Soak Masoor Dal and Moong Dal separately in cold water.

Drain the Dal and wash.

Keep it covered in a dry area and allow to sprout.

Marinate Chicken with Salt, Pepper, Dijon Mustard, Thyme and Garlic. Refrigerate overnight.

Grill the marinated Chicken on a grill pan from both sides.

Finish it over the oven for 6 minutes at 160 degrees C.

Allow to cool down at room temperature and then cut into small dices.

For Sweet Potato Paste- Boil the Sweet Potato in salted water with skin. Once tender, peel and allow to cool. Cut into rough dices and place in a blender. Add the water for grinding and blitz to a smooth puree.

Remove to a container and store refrigerate.

In a blender, add Dijon Mustard, minced Garlic, White Wine Vinegar, Salad Oil, Sweet Potato Paste, Lemon Juice and blitz to a smooth paste.

Remove to a mixing bowl. Add Oregano, Parsley, Salt, Pepper, minced fresh Red Chillies and mix it well.

Set aside in refrigerator till required.

Cut Carrot into dices and boil in salted water.

Layer the Lettuce at the bottom of a salad bowl.

Top with boiled Millets, mixed Sprouts, Apple, boiled Carrot, Tomato, Roasted Sweet Potato, Red Cabbage, Cucumber and grilled Chicken.
