Cut Tomatoes into half and char it in a hot grill pan.

Place charred Tomatoes, fresh Thyme, Salt, Paprika Powder, Chipotle Tobasco in a heavy bottom pan.

Add Water and boil it until the Tomatoes are smashed. Pass it through a strainer. Check seasoning and set aside to cool.

Cut Onions into slices and add it to a hot pan. Sauté until Onions become light brown.

Add Balsamic Vinegar, Jaggery, Salt and Red Chilli. Continue to cook Onions till onions are glazed and brown.

In a blender, add cleaned Basil Leaves, Walnuts, Water, Garlic, Oil, Salt and Pepper.

Blend to a coarse paste and set aside for later use.

In a bowl, marinate sliced Zucchini (green & yellow ) and sliced Tomatoes with Salt, Pepper, Thyme and Balsamic Vinegar.

In a hot grill pan, add Oil and grill marinated Zucchini on both sides and Tomato on one side.

For the assembly, take 3 slices of Bread. Grill the second slice.

Place one slice of bread and apply Basil Pesto on it.

Top with Green Lettuce.

Place half of the grilled Vegetables and caramelized onions on top.

Place the grilled slice of bread on top and layer with Rocket Lettuce.
