Directions

In a mixing bowl, add Tofu, Salt, Pepper, Dijon Mustard, Lime Zest, Thyme, Garlic and mix it well and keep it in a refrigerator overnight.

In a bowl, add Water, Dried Tomato and soak for 6 hrs. Drain and rinse the soaked tomatoes and then cut into dices and keep aside.

Boil Water in a heavy bottom vessel. Add diamond cut Beans, Salt and blanch. Remove it to a bowl and keep it in a refrigerator.

In a bowl, add Water, Cashew and soak for an hour. Drain and keep aside.

In a heavy bottom vessel, add Water, Sweet Potato and boil till soft. Allow it to cook and Peel the skin and cut into rough dices.

In a blender, add diced Sweet Potatoes and blend to make a smooth puree. Keep aside.

In a blender, add Soaked Cashew, Dijon Mustard, Lime Juice, Garlic, Salt, Water, Sweet Potato Paste and blend to fine past.

In a mixing bowl, add triangle shaped Green Zucchini, Yellow Zucchini, Salt, Pepper, Oregano, Oil and mix it well.

Heat griller and place the zucchini and grill till char marks appear.
