In a bowl, add Chicken Breast, Dijon Mustard , Salt, crushed Black Pepper, fresh Thyme, Lime Zest & chopped Garlic.

Marinate the Chicken.

In a pan, add Oil & marinated Chicken. Cook and let it rest for a couple of mins before slicing.

In a bowl, add boiled Penne Pasta, blanched Broccoli & Cucumber.

Add all ingredients to a mixer and blitz to a coarse paste.

Add Pesto. Mix well till evenly coated.

In a bowl, add Dijon Mustard, minced Garlic, chopped Parsley, Oregano, White Wine Vinegar, Lemon Juice, Water & Salad Oil.

In a bowl, layer the salad. Place mixed Lettuce at the bottom.

Add Pesto Penne mixture.

Place all ingredients in a mixing bowl and toss together. Arrange tomato wedges in a baking tray with the cut side up and roast at 180 degrees for 20 mins till lightly charred.

Place the sliced chicken breast & spread pesto evenly on the sliced Chicken Breast.
