Marinate Chicken with Salt, Pepper, Dijon Mustard, Garlic, chopped Thyme and Lime Zest.

On a hot grill pan, grill the Chicken on both the sides at 160 deg Celsius for 6 mins.

Marinate triangle shape color Peppers with Salt, Pepper, Oregano and Oil.

Arrange on roasting pan and roast for 20 mins at 180 deg Celsius.

Boil the Sweet Potato in salted water with skin. Once tender, peel and allow to cool. Cut into rough dices and place in a blender. Add the water for grinding and blitz to a smooth puree.

In a blender, add Salad Oil, White Wine Vinegar, Lemon, Salt, Pepper, Dijon Mustard, chopped Parsley and Sweet Potato Paste, Oregano and blend.

In a bowl, on a bed of lettuce arrange triangle cut Cucumber, roasted Bell Pepper and Cherry Tomato cut into halves.
