Directions

Boil diced Sweet Potato.

Add boiled Sweet Potato in blender.

Blend and keep aside.

Roast sliced Onion in a roasting pan.

Keep roasted sliced Onion aside.

Assemble Kaffir Lime, chopped Garlic, Onion, salt, Lemongrass, Galangal, Coconut Powder, Tofu dice, Red Chilly, Oil.

Marinate Tofu with all the assembly ingredients.

On a hot grill pan, sear both the sides of the Tofu. Finish in the oven at 180 degrees C for 6 minutes.

Assemble chopped Garlic, Sweet Potato puree, Oil, Vinegar, fresh chopped Red Chilli, Salt, Jaggery, Water.

In a Blender, add all ingredients and blitz.

Preserve the dressing in a bowl and keep it aside.

Cut julienne 1 cup Raw Mango, Carrot, Beans and Cucumber.

Pluck Mint Leaves, cut Bell Peppers, cut Cherry Tomato.

In a bowl, add all the vegetables with roasted Onion and Spring Onion.

Add grilled julienne Tofu.
