Directions

Soak Millet in Water overnight.

Boil Foxtail Millet in Water with Salt.

Cook until Millet beans are soft.

Bring Water to boil to pour over Tamarind.

Allow to soak Tamarind for an hour.

Mash the Tamarind until the pulp is formed.

Strain the pulp and store refrigerated.

Mix Salt & Water and bring it to boil.

Take off heat, add diced Tofu to hot Water and leave for 15 minutes.

Drain tofu and place it in bowl.

Add Ginger, Garlic & Light Soy and mix gently.

Spread the mixture on a baking tray and bake at 180 degrees C for 10 minutes.

Cut Watermelon & Cantaloupe into dice, remove segments of Orange and shred the Basil.

Mix together and set aside.

Grate Raw Mango and Carrot.

Deseed and juleinne the Cucumber.

Blanch the Beans.

Cut Cherry Tomato into half and Spring Onion into 1 inch diagonal.

In a bowl mix Jaggery, Tamarind pulp, Dark Soya, Aromat Powder, Salt, Pepper, Water, finely chopped Chili, Garlic and Lemon Grass to form the dressing.

In a bowl add all ingredients ( dressing, Cherry Tomato, Spring Onion, blanched Beans, Cucumber and grated Raw Mango & Carrot ) and toss.

Blanch the Carrot and Beans.

Heat Oil in a pan, add Spring Onion & Leeks and fry till aromatic.

Add boiled Carrot & Beans and sauté.

Add boiled Millet and sauté.

Add seasoning, Black Sesame Seeds and White Sesame Seeds.

Continue sauté till millet is soft and fluffy. Serve garnished with Spring Onions.

Cut Peppers ( Red, Green, Yellow ) into dice.

Cut Onion into dice.

Heat Oil in a pan and stir fry vegetables till tender.

Add Teriyaki Sauce & Water and bring it to boil.
