Peel and fine chop the onion and tomato. Set aside. Heat oil in a pan or vessel, add green cardamom and bay leaf and saute.

Add onion into the vessel and cook till it gets caramelized brown color. do not burn and keep stirring occasionally.

Once the onion starts turning into brown color, add ginger garlic paste and cook until the raw flavour disappears

Add chopped tomato and masalas and saute till the mixture starts to leave oil.

Once the mixture leaves oil it means it's cooked. Do so on a low to medium flame. tomatoes should be mashed and mixture should have a reduced moisture content

Add salt to taste and mix. once the gravy turns into semi thick consistency, turn off the flame and it is ready to use as required.

Bring the mixture down to room temperature and then store refrigerated
