Roast the cashews in a pan till golden. Set aside to cool down.

Once it cools down, blitz to a powder and then blend slowly to form a coarse cashew mixture. If you blitz it continuously, without any brakes, it will leave oil. Place in the refrigerator.

Juice the lime and set aside.

Peel and deseed the lychees. Cut half of them into small chunks.

Place all ingredients including coarse cashew mixture and half of the lychee flesh in a blender (except rose petals).

Blend till all ingredients combine and are smooth.

Tear the rose petals into bits and fold into the blended mixture along with small lychee chunks. Place in a freezer safe container and freeze for 6 to 8 hours or overnight.

Remove, scoop out and serve.
