Directions

Soak dates in water for 10-15 min, drain and de-seed the dates. Prepare a baking tin by lining foil.

Dry roast the walnuts in a pan, and set aside to cool down.

Roughly chop the dark chocolate.

In a blender jar, add walnut and pulse blend to coarse texture.

Add soaked dates and chocolate. blend again to get a sticky coarse paste.

Transfer the mixture to a baking tray, spread it evenly with a spatula. Keep the baking tray in the freezer for 2 hours or overnight, until the fudge is set.

Remove from the tray, slice the fudge into squares and serve. Store the fudge in an airtight container in the fridge.

Fudge was invented in Baltimore, America, in the year 1886 on Valentine's Day by a confectioner as an accident. There are many versions of fudge in the regions of England and Scotland. The first-ever fudge was caramel flavour, and there are many other fudges available. Chocolate fudge is the most popular one, and fudge is the drier version of fondant.
How is Fudge Different from Brownie?
Fudge is made up of chocolate condensed milk sweetened with some additions into them, namely nuts, cookies, nibs of cocoa, marshmallows, dried fruits, peanut butter, etc. At the same time, brownies contain only cocoa powder with eggs, all-purpose flour, butter, baking powder and walnuts. Fudge is always soft and dense in texture, resembling a cheese cream, but brownies are fluffy and more like a cake.

Chocolate chip cookies To make chocolate chip cookies, one needs to have one cup of butter that is softened, one cup of white sugar, one cup of brown sugar, two eggs, two teaspoons of vanilla extract, one teaspoon of hot water, half a teaspoon of salt, three cups of all-purpose flour, one cup of chopped walnuts and two cups of chocolate chips. Preheat the oven to 180 degree Celsius. Mix the softened butter with white sugar and brown sugar until they are smooth. Drop one egg at a time, and then add the vanilla extract. Make sure to dissolve the baking soda in hot water and then mix it with the batter. Add a pinch of salt and then stir in the flour, nuts and chocolate chip. Take a scooping spoon and drop them onto greased pans. Bake for ten minutes until the edges of the cookies turn brown.
Chocolate Mousse The ingredients required to make the chocolate mousse are heavy cream, egg yolks, granulated sugar, vanilla extract, bittersweet chocolate and sea salt. Whip the egg yolks with sugar with the help of an electric blender at high speed until they turn pale and fluffy. Heat one portion of the heavy cream in a saucepan over a low flame until they turn warm. Whisk the egg mixture with the warm heavy cream. This will temper the egg yolks in the mix. Cook the contents by constantly whisking over low flame until they thicken. If there are any clumps, then use a sieve and cook until the temperature is 160 degrees. Melt the chocolate and allow it to cool to room temperature by stirring every ten minutes. Then whip the remaining heavy cream until a stiff peak forms and fold the melted chocolate into it. Take small quantities of the mousse and refrigerate for two hours. Top them with sweetened whipped cream and garnish with grated chocolate.
Chocolate cake One needs 250 grams of all-purpose flour, 250 grams of powdered sugar, four beaten eggs, two tablespoons of cocoa powder, one teaspoon of baking powder and one cup of butter. Grease a baking pan and leave it aside for future use. Preheat the oven to 180 degree Celsius. Sieve together the all-purpose flour with the cocoa and baking powder. Mix butter and sugar in a separate bowl. Beat them until the sugar dissolves completely. After this step, beat the eggs into the butter two at a time. Fold the dry mixture into the batter and then pour it into the greased pans. Bake for 30 minutes in an oven. Always check whether the centre of the cake is cooked properly with a sharp knife. Allow the cake to cool to room temperature. Invert the pan, and then once the cake comes off from it, one can do icing or toppings. Chocolate ganache, whipped cream and chocolate chips are some toppings to enhance the look of the cake.
