Wash, clean and cut the pineapple into bite-size chunks. Place the chunks in a tray and freeze overnight or till the chunks are completely frozen through.

Wash and grate the ginger. In a blender jar, add the frozen pineapple, ginger and half the amount of lemon juice and blend.

The texture will be thick and dense. Pulse blend if required to break the frozen pineapple chunks.

Taste the sorbet, add more lime juice if needed.

Scoop sorbet in a serving bowl, drizzle some honey and serve.
